A john boat can be a great way to get around down there but watch the weather. You don't have to go too far to find fish. Check out the everglades diary website for excellent camping info. What kind of power do you have for the boat and how big is it?
The Fla Sportsman board is your best bet for fishing info. Plan to bring 10lb test spinning gear, soft plastic lures and a few jigs or plugs. Shrimp tips/pieces can be helpful. A chunk of cut ladyfish can make a slow day better. Bring one bigger rod too for jewfish. Look for clean water that is moving. Typical spots are points, creek mouths etc. A lot of folks fish the low incoming tide on the outside flats for redfish, snook and trout. It's all incredibly fishy looking, it will drive you nuts.
